For Frying

Preparation

  • In a large bowl, combine flour, sugar, baking powder, and salt. Whisk until well mixed.
  • In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract. Pour into the dry ingredients, mixing until a thick dough forms.
  • On a lightly floured surface, knead the dough gently for about a minute until smooth.
  • Roll the dough to about ½ inch thickness and cut into squares or rectangles, about 2 inches in size.

Cooking

  • In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  • Carefully drop the cut dough into the hot oil, frying until puffed and golden brown, about 2-3 minutes per side.
  • Remove the beignets with a slotted spoon and place them on a paper towel to drain excess oil. Dust generously with powdered sugar while still warm.

Serving

  • Enjoy them fresh out of the fryer, optionally served with fruit or chocolate syrup.

Notes

Beignets are best enjoyed fresh but can be stored in an airtight container for 1-2 days. Reheat briefly in the oven for crispness. For a healthier option, these can be baked at 375°F for 15-20 minutes.
