Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Filling

  • 2 cups diced apples preferably Granny Smith
  • Additional cinnamon and sugar for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, whisk together flour, baking powder, salt, and ground cinnamon.
  • In another bowl, mix granulated sugar, brown sugar, applesauce, eggs, milk, and vanilla extract until smooth.
  • Combine the wet and dry ingredients gently. Be careful not to overmix!
  • Fold in the diced apples until evenly distributed throughout the batter.
  • Pour half of the batter into the greased loaf pan.
  • Sprinkle a mix of cinnamon and sugar on top of the first layer of batter.
  • Spread the rest of the batter over the top, and repeat the cinnamon-sugar sprinkle.

Baking

  • Bake in the preheated oven for 50-55 minutes or until a toothpick comes out clean.
  • Let it cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Serve warm with powdered sugar on top, or with vanilla ice cream or whipped cream. Pairs well with spiced apple cider or coffee. For a healthier option, substitute some flour with whole wheat or add oats.
