  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder (optional) For added flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the cottage cheese and eggs until well combined.
  • Stir in the shredded cheese, chopped vegetables, salt, pepper, and garlic powder if using.
  • Grease a baking dish with cooking spray or olive oil.
  • Pour the egg mixture into the prepared baking dish.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the top is golden and the eggs are set.
  • Remove from the oven and let it cool slightly before slicing.
  • Serve warm, garnished with fresh herbs if desired.

Notes

You can prepare the mixture the night before for an easy bake in the morning. Leftovers can be stored in the fridge for up to 3 days.
