  • 4 large large eggs
  • 200 g feta cheese crumbled
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a medium baking dish, drizzle the olive oil around the bottom.
  • Scatter the cherry tomato halves evenly across the dish.
  • Add the fresh spinach over the tomatoes.
  • Crumble feta cheese over the top of the spinach and tomatoes.
  • Create four small wells in the mixture, and gently crack an egg into each well.
  • Sprinkle dried oregano, salt, and pepper over everything.
  • Place the baking dish in the preheated oven and bake for 20-25 minutes, or until egg whites are set.
  • Remove from the oven and let it cool for a few minutes.
  • Garnish with fresh basil before serving.

Notes

For variations, swap spinach for kale, use goat cheese, or add bell peppers for extra flavor. Serve with crusty bread or fresh fruit on the side.
