Beef Stroganoff

Ingredients
  

Main Ingredients

  • 600 g rib-eye steak, trimmed and pounded ¾ cm thick Use high-quality beef for the best flavor.
  • 300 g cremini mushrooms, sliced ⅛-inch thick
  • 1 medium onion, thin-sliced
  • 1 Tbsp Dijon mustard Adjust quantity to taste.
  • 150 ml full-fat sour cream For a healthier alternative, use Greek yogurt.
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil, for searing
  • to taste pinch Kosher salt
  • to taste pinch Freshly cracked black pepper
  • to garnish Chopped chives
  • Egg noodles or tagliatelle, for serving Traditional serving choice.

Instructions
 

Preparation

  • Pound the rib-eye steak until it's thin, then slice it into strips. Season with salt and pepper.

Searing Beef

  • Heat 1 tablespoon of oil in a pan on high heat. Sear half the beef strips for about 30 seconds on each side, then transfer to a plate.
  • Add the remaining oil to the pan and repeat the process with the remaining beef, setting it aside as well.

Cooking Vegetables

  • Lower the heat, then melt the butter in the same pan. Add the sliced onion and cook for 1 minute before adding the mushrooms. Cook for 4 minutes until they turn golden.

Making the Sauce

  • Sprinkle flour over the vegetables and stir for a minute to combine.
  • Pour in ½ cup of beef broth, making sure to scrape up any bits stuck to the pan. Once the mixture is smooth, add the rest of the broth and Dijon mustard. Let it simmer for 5 minutes.
  • Remove the pan from heat and stir in the sour cream until the sauce is silky and smooth.
  • Return the beef and any juices back to the pan. Heat on low for about 1 minute.

Serving

  • Ladle the beef stroganoff over buttered egg noodles or tagliatelle and sprinkle with chopped chives.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave with a splash of beef broth if needed.
