  • 1 lb Boneless, skinless chicken thighs or breasts For tenderness
  • 1 cup Long-grain rice or jasmine rice Ensures a fluffy texture
  • 1 cup Bell peppers (mixed colors) Adds taste and beautiful hues
  • 1 medium Onion, sweet Enhances overall flavor
  • 2 cloves Garlic, minced or fresh Infuses the dish with aromatic goodness
  • 2 tbsp Caribbean spice mix Can be store-bought or homemade
  • 2 cups Chicken broth Helps cook the rice and infuses flavor
  • 2 tbsp Olive oil For sautéing
  • 1/4 cup Fresh herbs (cilantro) For garnish

Preparation

  • Chop the bell peppers and onion, mince the garlic, and cut the chicken into bite-sized pieces.

Cooking

  • In a large skillet or pot, heat olive oil over medium heat.
  • Add the chicken pieces, season with the Caribbean spice mix, and cook until browned on all sides.
  • Add the garlic, onion, and bell peppers to the pan. Sauté until they are softened and fragrant.
  • Stir in the rice until it is well combined with the chicken and veggies.
  • Pour in the chicken broth, bring to a gentle boil, then lower the heat and cover the pot.
  • Allow it to simmer for about 20 minutes or until the rice is cooked and has absorbed all the liquid.
  • Once done, fluff the rice with a fork and garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for later use. Feel free to swap chicken for shrimp or tofu for a plant-based option. Experiment with different spices to create a unique twist.
