Ingredients
  

  • 6 medium Potatoes diced into small cubes
  • 14 oz Smoked Sausage sliced into rounds
  • 2 cups Shredded Cheddar Cheese divided
  • 1 packet Ranch Seasoning Mix
  • 1 cup Sour Cream
  • 1 cup Mayonnaise
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Black Pepper
  • ½ tsp Paprika
  • 2 Green Onions chopped for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and grease casserole dish with olive oil.
  • Toss diced potatoes with olive oil, garlic powder, onion powder, black pepper, and paprika. Spread in casserole dish and bake 25 minutes, stirring halfway.
  • While potatoes bake, slice smoked sausage and lightly brown in a skillet over medium heat.
  • Mix sour cream, mayonnaise, ranch seasoning, and 1 cup cheddar cheese until smooth.
  • Remove potatoes from oven; add browned sausage and creamy ranch mixture. Stir gently.
  • Top with remaining cheddar cheese and bake 20 more minutes until melted and bubbly.
  • Let rest 5 minutes, sprinkle with green onions, and serve hot.
