- 6 medium Potatoes diced into small cubes
- 14 oz Smoked Sausage sliced into rounds
- 2 cups Shredded Cheddar Cheese divided
- 1 packet Ranch Seasoning Mix
- 1 cup Sour Cream
- 1 cup Mayonnaise
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Black Pepper
- ½ tsp Paprika
- 2 Green Onions chopped for garnish
Preheat oven to 375°F (190°C) and grease casserole dish with olive oil.
Toss diced potatoes with olive oil, garlic powder, onion powder, black pepper, and paprika. Spread in casserole dish and bake 25 minutes, stirring halfway.
While potatoes bake, slice smoked sausage and lightly brown in a skillet over medium heat.
Mix sour cream, mayonnaise, ranch seasoning, and 1 cup cheddar cheese until smooth.
Remove potatoes from oven; add browned sausage and creamy ranch mixture. Stir gently.
