  • 2 pieces boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 oz egg noodles Cook according to package instructions
  • 4 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped Optional garnish
  • Grated Parmesan cheese Optional garnish

Instructions
 

Cooking the Chicken

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium heat.
  • Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and fully cooked.

Preparing the Noodles

  • While the chicken cooks, bring a large pot of salted water to a boil.
  • Add the egg noodles and cook according to package instructions until al dente.
  • Drain the noodles and return them to the pot.

Combining

  • Melt the butter in the same skillet used for the chicken.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Add the drained noodles to the skillet and toss to coat with the garlic butter.
  • Slice the cooked chicken and place it on top of the buttered noodles.
  • Garnish with chopped parsley and grated Parmesan cheese, if desired. Serve immediately.

Notes

Substitute chicken thighs for juicier meat. Use whole wheat noodles for a healthier option. Add steamed broccoli or peas for added nutrition. For extra flavor, sprinkle some Italian seasoning over the dish. If you prefer a creamier texture, add a splash of heavy cream to the buttered noodles.
