- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest optional
- 1/2 cup unsalted butter melted and cooled
- 1/4 cup chocolate chips or finely chopped chocolate
Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat eggs and sugar until pale and fluffy. Add vanilla extract and lemon zest.
Gently fold the flour mixture into the egg mixture until combined.
Fold in the melted butter carefully. Do not overmix.
Gently fold in the chocolate pieces.
Spoon batter into the prepared madeleine pan, filling each mold about 3/4 full.
Bake for 10–12 minutes, or until edges are golden brown and centers spring back when lightly pressed.
Remove from oven and let cool for a few minutes. Remove madeleines from pan and cool completely on a wire rack.
