Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest optional
  • 1/2 cup unsalted butter melted and cooled
  • 1/4 cup chocolate chips or finely chopped chocolate

Instructions

  • Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, beat eggs and sugar until pale and fluffy. Add vanilla extract and lemon zest.
  • Gently fold the flour mixture into the egg mixture until combined.
  • Fold in the melted butter carefully. Do not overmix.
  • Gently fold in the chocolate pieces.
  • Spoon batter into the prepared madeleine pan, filling each mold about 3/4 full.
  • Bake for 10–12 minutes, or until edges are golden brown and centers spring back when lightly pressed.
  • Remove from oven and let cool for a few minutes. Remove madeleines from pan and cool completely on a wire rack.

Notes

  • For extra flavor, dip the cooled madeleines in melted chocolate.
  • You can add a pinch of cinnamon or espresso powder for a unique twist.
  • Ensure the butter is cooled before folding in to keep the texture light and fluffy.
