Ingredients
  

For the Brisket

  • 3 to 4 pounds brisket Look for a well-marbled cut for maximum flavor.
  • 6 cups water
  • 1/2 cup kosher salt
  • 1/4 cup brown sugar

For the Spice Mix

  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • 1 tablespoon mustard seeds
  • 1 tablespoon paprika
  • 4 cloves garlic (minced)
  • 1 leaf bay leaf
  • 1 teaspoon ground ginger
  • 1 teaspoon red pepper flakes (optional) For extra heat.

Preparation

  • In a small pan, toast the black peppercorns, coriander seeds, and mustard seeds over medium heat for about 2–3 minutes until fragrant.
  • In a large pot, combine the toasted spices, water, kosher salt, brown sugar, minced garlic, bay leaf, ground ginger, and red pepper flakes if using. Bring this mixture to a gentle boil, stirring until the salt and sugar dissolve. Then, remove it from the heat and let it cool completely.
  • Once your brine has cooled, place the brisket into a large, resealable bag. Pour the brine over the brisket, making sure it’s fully submerged. Seal the bag tightly, and refrigerate for at least 5 to 7 days, flipping it every couple of days.

Cooking

  • After the brining time is complete, remove the brisket from the bag, rinse it under cold water, and discard the brine.
  • Place the brisket in a slow cooker or a large pot, cover with water, and bring it to a boil. Simmer on low heat for about 3 to 4 hours, or until the meat is fork-tender.

Serving

  • Once your corned beef is cooked to perfection, remove it from the pot and let it rest for about 15 minutes before slicing. Cut against the grain for the best texture.

Notes

Serve with classic sides like cabbage, potatoes, and carrots for a complete meal. You can also add herbs like thyme or rosemary to the brine for extra depth. For a quicker method, use a slow cooker and cook on low for about 8 hours.
