Ingredients
  

  • 4 large russet potatoes
  • 4 large russet potatoes
  • 1 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp chopped green onions
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika optional

Instructions
 

  • Wash and scrub potatoes. Pierce with a fork.
  • Air fry potatoes at 400°F for 35-40 minutes.
  • Slice potatoes, scoop out flesh, and mix with cottage cheese, cheddar, and spices.
  • Fill skins with mixture, air fry again at 400°F for 10-12 minutes.
  • Top with green onions and serve.
