  • 1 cup Arborio rice Essential for creamy texture.
  • 4 cups broth (chicken or vegetable) Add in stages.
  • 1 medium onion Sauté until caramelized.
  • 1/2 cup grated Parmesan cheese Stir in before serving for richness.
  • 2 tablespoons butter For added creaminess.
  • 1 tablespoon fresh parsley or chives For garnish.

Preparation

  • Sauté the chopped onions in the Instant Pot until they are caramelized.
  • Add the Arborio rice and stir for a minute to coat the rice with oil and flavor.
  • Pour in 1 cup of broth, just enough to cover the rice, and wait until it's absorbed before adding more.
  • Continue adding broth gradually, stirring occasionally, until all broth is absorbed.

Finishing Touches

  • Once the rice is cooked and creamy, fold in the Parmesan cheese and butter.
  • Garnish with fresh parsley or chives before serving.

Notes

For best results, use Arborio or Carnaroli rice, and ensure to sauté the onions for a depth of flavor.
