Preparation

  • In a mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, and a pinch of salt and pepper. Blend until smooth.
  • Trim the crusts from the bread slices to create a clean edge.
  • Generously spread the cream cheese mixture on one side of each slice of bread.
  • On four of the bread slices with the cream cheese, layer the thin cucumber slices evenly.
  • Top with the remaining slices of bread, cream cheese side down, to create a sandwich.
  • Cut the sandwiches into quarters or triangles.
  • Arrange the sandwiches on a platter and serve immediately, or cover with a damp towel until ready.
