Instructions
 

Preparing the Syrup

  • In a heavy-bottomed saucepan, mix the white granulated sugar, corn syrup, and water.
  • Gently stir the mixture and heat it over medium-high heat until it reaches a gentle boil without stirring.
  • Use a candy thermometer to monitor the temperature; aim for 240-245°F (116-118°C) - the soft ball stage.
  • Once the desired temperature is reached, remove the pan from heat and let it cool for 5-10 minutes.

Making Candy Strands

  • Pour the syrup onto a greased surface and let it cool until warm but still soft.
  • Grease your hands with oil and start pulling and stretching the syrup into thin strands.
  • Continue pulling and shaping until the syrup forms delicate, fine strands.

Adding Fillings

  • Once the strands are ready, fill them with your choice of peanuts, sesame seeds, coconut, or sweetened red bean paste.
  • Gently gather and twist the strands together to form a web-like structure.
