Ingredients
  

Pasta and Vegetables

  • 8 oz pasta (e.g., whole wheat, penne, or fusilli)
  • 2 cups broccoli florets

Sauce and Seasoning

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Parmesan cheese, grated (for serving)
  • Lemon zest (for garnish, optional)

Cooking

  • Cook the pasta according to package instructions. In the last 3 minutes of cooking, add the broccoli florets to the pasta boiling water.
  • Drain the pasta and broccoli, reserving 1/2 cup of the pasta water.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  • Add the drained pasta and broccoli to the skillet. Toss to combine, adding reserved pasta water a little at a time until you reach your desired consistency.
  • Season with salt and pepper to taste.
  • Serve warm, topped with grated Parmesan cheese and lemon zest if desired.

Notes

For a heartier meal, add cooked chicken or chickpeas. Use whole wheat or gluten-free pasta for healthier options. Adjust the garlic and red pepper flakes according to your family's taste preferences. Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, use a microwave or warm it gently in a skillet, adding a splash of water to keep it moist.
