large sweet potatoes
scrubbed and halved

olive oil
Salt and black pepper
to taste

black beans
drained and rinsed

cup
shredded cheddar or mozzarella cheese

Greek yogurt or sour cream

green onion
chopped

crumbled bacon or chopped spinach

Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Cut the sweet potatoes into thin fries.
Toss with olive oil, salt, and pepper until evenly coated.
Spread in a single layer on the baking sheet.
Bake for 20–25 minutes, flipping halfway, until golden and crisp.
Top with black beans, cheese, Greek yogurt, and green onions.
Add bacon or spinach if desired, then serve warm.
Notes
For extra crispiness, soak the cut fries in cold water for 30 minutes before baking, then pat dry completely.
