Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
  • In a mixing bowl, combine the softened butter and sugar, then beat until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Incorporate the vanilla extract and blend until smooth.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Transfer the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, let it cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Store tightly wrapped at room temperature for up to 5 days or freeze wrapped for up to 3 months. Can substitute half the flour with almond flour or use coconut sugar for a healthier version. Consider adding lemon zest or chocolate chips for variations.
