Ingredients
  

  • 1 cup Green lentils rinsed
  • 1 Onion chopped
  • 2 Carrots diced
  • 2 tbsp Olive oil
  • 1 tsp Cumin ground
  • 1 tsp Paprika
  • 4 cups Vegetable broth or water
  • Salt & pepper to taste

Instructions
 

  • Heat olive oil in a large soup pot over medium heat.
  • Add chopped onions and carrots; sauté for 5 minutes.
  • Stir in cumin and paprika, then add lentils and broth.
  • Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  • Season with salt and pepper before serving.
