Ingredients
  

  • 200 g pasta spaghetti or penne
  • 200 g feta cheese block
  • 300 g cherry tomatoes
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • Salt & pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place the cherry tomatoes and feta block in a baking dish. Drizzle with olive oil, sprinkle garlic, salt, and pepper.
  • Roast in the oven for 20 minutes until tomatoes are soft and feta is creamy.
  • Cook pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
  • Mix the roasted feta and tomatoes with the cooked pasta, adding pasta water to create a creamy sauce.
  • Garnish with fresh basil leaves and serve immediately.

Notes

  • Use good quality feta for a richer flavor.
  • Can add chili flakes for a spicy twist.
  • Works well with penne, rigatoni, or spaghetti.
