  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • Start by rinsing the baby potatoes and halving them.
  • Mince the garlic.

Seasoning

  • In a bowl, sprinkle the chicken breasts with salt, pepper, and Italian seasoning. Pat the chicken to ensure the spices adhere well.

Layering Ingredients

  • Place the halved potatoes at the bottom of the crockpot.
  • Lay the seasoned chicken breasts on top.

Cooking

  • Sprinkle the minced garlic over the chicken, then pour in the chicken broth.
  • Cover your crockpot and let it slow cook for 6 to 8 hours on low, or cook it on high for 4 hours.

Finishing Touch

  • In the last 30 minutes of cooking, sprinkle the grated Parmesan cheese over the chicken and potatoes, stirring gently.

Serving

  • Garnish with fresh parsley before serving.

Notes

For a thicker sauce, remove some of the cooking liquid in the last hour and simmer it on the stove to reduce it. Add a splash of lemon juice for a zesty kick or sun-dried tomatoes for a robust flavor.
