  • 2 tbsp Olive Oil
  • 1 lb Boneless Chicken Thighs Cut into chunks
  • 1 cup Onion Diced
  • 3 cloves Garlic Minced
  • 2 cups Green Chiles Roasted peeled & chopped
  • 3 cups Chicken Broth Low sodium preferred
  • 2 cups Potatoes Diced
  • 1 tsp Ground Cumin
  • 1/2 tsp Oregano Dried
  • to taste — Salt & Pepper
  • Optional — Fresh Cilantro For garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken and cook until lightly browned, about 5–7 minutes.
  • Stir in onions and garlic. Cook until softened, about 3 minutes.
  • Add green chiles, potatoes, cumin, oregano, salt, and pepper.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer uncovered for 30–35 minutes, or until potatoes are tender.
  • Adjust seasoning if needed.
  • Garnish with fresh cilantro and serve hot.

Notes

For extra flavor, try roasting the green chiles yourself. This stew also tastes even better the next day!
