  • 1 cup cooked chicken, shredded Leftover rotisserie chicken works well.
  • 1/2 cup ranch dressing Choose a low-fat version for fewer calories.
  • 1 cup shredded cheese Cheddar, mozzarella, or a blend can be used.

Preparation and Cooking

  • Preheat a non-stick skillet or electric griddle over medium heat.
  • On one tortilla, spread half of the ranch dressing evenly.
  • Layer half of the shredded chicken and half of the cheese on top of the ranch dressing.
  • Top with the second tortilla and carefully transfer to the preheated skillet.
  • Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  • Remove from heat, cut into wedges, and serve immediately.

Notes

Cool quickly and wrap tightly to store leftovers in the fridge for up to 3 days. For best texture, re-crisp in a skillet or toaster oven. Can be frozen flat for up to 1 month; reheat from frozen on low heat.
