Ingredients

  • 3/4 cup 3/4 cup (180ml) cold buttermilk (or plain yogurt + milk) React with leaveners and tenderizes the crumb.
  • 1 large 1 large egg Adds richness and color.

Optional Add-ins

  • 3/4 cup 3/4 cup fresh berries or chocolate chips Can be added as desired.

Instructions
 

Preparation

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Cut in the cold butter using a pastry cutter or grater until the mixture resembles coarse crumbs with pea-sized bits.
  • Whisk the egg into the cold buttermilk, then pour it into the dry mixture and stir gently until just combined.
  • Fold in optional add-ins gently, adjusting moisture as needed.
  • Turn the dough onto a floured surface and pat it into a 3/4–1 inch thick circle, then cut into 8 wedges.
  • Place on the prepared sheet, brush the tops with buttermilk or egg wash, and sprinkle with coarse sugar if desired.

Baking

  • Bake for 12–15 minutes, or until golden brown and risen.
  • Allow to cool on a rack for 5–10 minutes before serving.

Notes

Keep the butter and liquids cold to achieve the best texture. Avoid overworking the dough to prevent tough scones.
