Ingredients

  • 2 medium sweet potatoes sliced into ½-inch rounds
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • cup crumbled feta cheese
  • 2 tbsp honey or maple syrup
  • 1 tbsp chopped fresh thyme or rosemary optional
  • Crushed walnuts or pecans for garnish

Instructions

  • Preheat the oven:
  • Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the sweet potatoes:
  • Wash and slice the sweet potatoes into ½-inch thick rounds. Keep the skin on for extra texture and nutrients.
  • Season and bake:
  • Arrange the rounds on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper.
  • Bake for 25–30 minutes, flipping halfway through, until tender and slightly golden on the edges.
  • Add toppings:
  • Remove from the oven and let them cool slightly.
  • Top each round with crumbled feta cheese and a light drizzle of honey.
  • Garnish and serve:
  • Sprinkle with fresh thyme or chopped parsley for a pop of color and flavor.
  • Serve warm or at room temperature as an appetizer or side dish.

Notes

  • For extra crispiness, brush the sweet potato rounds lightly with olive oil before baking.
  • You can substitute goat cheese for feta if you prefer a creamier texture.
  • Add a pinch of chili flakes for a sweet-spicy flavor contrast.
  • These are best served fresh but can be reheated in the oven for 5–7 minutes at 350°F (175°C).
  • Perfect for holiday platters, brunch menus, or healthy snacks.
