  • 2 cups cooked jasmine or basmati rice
  • 1 large ripe avocado sliced
  • 1 small cucumber thinly sliced (optional)
  • 1 small red bell pepper diced (optional)
  • Fresh cilantro leaves for garnish
  • Optional Toppings & Dressing:
  • Extra lime wedges
  • Drizzle of honey
  • Chili flakes for a hint of spice

  • Marinate the Chicken: Mix honey, lime juice, lime zest, olive oil, garlic powder, salt, and pepper in a small bowl. Brush over chicken and let sit 10–15 minutes.
  • Cook the Chicken: Heat skillet over medium heat. Cook chicken 5–7 minutes per side until golden brown and fully cooked. Let rest 5 minutes before slicing.
  • Assemble the Stack: Layer rice on a plate, top with avocado slices, then chicken. Repeat if desired.
  • Add Veggies & Garnish: Top with cucumber, red bell pepper, and cilantro. Drizzle honey and sprinkle chili flakes if desired.
  • Serve: Add lime wedges and enjoy immediately.
