Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon dried Italian herbs (oregano, basil, thyme)

Wet Ingredients

  • 1 cup shredded mozzarella cheese
  • 1 cup buttermilk
  • 1/4 cup olive oil

Optional Garnish

  • extra herbs for garnish Use fresh if available for better flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the flour, baking powder, salt, and dried Italian herbs.
  • Stir in the shredded mozzarella cheese until it’s evenly dispersed throughout the flour mixture.
  • In another bowl, whisk together the buttermilk and olive oil.
  • Pour the liquid ingredients into the dry ingredients. Gently mix until just combined.
  • Turn the dough out onto a floured surface and knead lightly for about 1 minute.
  • Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
  • Optional: Brush the top with a bit of olive oil and sprinkle some extra herbs on top.

Baking

  • Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Cool for a few minutes, then slice and serve warm.

Notes

For a sweeter version, include a handful of grated parmesan cheese. Serve with a side of marinara sauce for dipping. Can be made ahead and stored in the refrigerator before baking.
