Brownie Base

  • 1 cup unsalted butter Best to control salt level.
  • 2 cups granulated sugar Can reduce for less sweetness.
  • 4 large eggs
  • Zest of 2 lemons
  • 1 cup fresh lemon juice Fresh juice provides the best flavor.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  • Melt the butter and let it cool slightly. In a large bowl, mix the melted butter with sugar until well combined.
  • Add the eggs, lemon zest, lemon juice, and vanilla extract, and mix until smooth.
  • In a separate bowl, mix the flour, baking powder, and salt. Slowly add this to the wet mixture and stir gently until everything is combined. Do not overmix.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for about 20 to 25 minutes, until the center is set.
  • Let the brownies cool before cutting them into squares.

Notes

The brownies may look soft in the center when they come out of the oven; this is normal and helps keep them moist. For a stronger lemon flavor, you can add a small amount of lemon extract. Store lemon brownies in an airtight container in the refrigerator for up to one week.
