  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, whisk together the olive oil, maple syrup, Dijon mustard, salt, and black pepper.
  • Add the carrot sticks to the bowl and toss until they are well coated with the marinade.
  • Spread the carrots out in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast the carrots in the preheated oven for 20-25 minutes, stirring halfway through, until they are tender and caramelized.
  • Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

You can swap carrots for sweet potatoes or parsnips for a unique flavor. Add a pinch of cayenne pepper for a spicy kick or drizzle balsamic glaze for extra flavor.
