  • 4 pieces Tortillas Your choice of flour or whole wheat tortillas works well.
  • 2 cups Fresh Spinach Fresh spinach is preferable for its vibrant color and flavor.
  • 1 cup Crumbled Feta Cheese Adds a salty, tangy kick.
  • 1 cup Shredded Mozzarella Cheese For a melty finish.
  • 1 medium Red Onion Finely sliced for added crunch and flavor boost.
  • 1 tablespoon Olive Oil For cooking and adding flavor.

Preparation

  • Start by washing and chopping the fresh spinach and slicing the red onion.

Cooking

  • In a large skillet, heat a tablespoon of olive oil over medium heat.
  • Add the sliced red onion to the pan and sauté for 2-3 minutes until it’s translucent. Then, toss in the spinach and cook until wilted, about another 2 minutes.
  • On one half of a tortilla, layer the sautéed spinach and onion, followed by a generous sprinkle of feta and mozzarella cheese. Fold the tortilla over to cover the filling.
  • Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese is melty.
  • Remove from the skillet, let it cool for a minute, then cut it into wedges. Enjoy with your favorite dipping sauce!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Just reheat them in the skillet for a couple of minutes before serving. Feel free to switch out the spinach for kale or arugula and use different cheeses like goat cheese or cheddar for a unique twist.
