  • 4 pieces boneless, skinless chicken breasts Use similar-sized pieces for even cooking.
  • 1 cup mayonnaise or Greek yogurt Greek yogurt offers a lighter version.
  • ½ cup grated or shredded parmesan cheese Freshly grated parmesan delivers better flavor.
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • optional chopped parsley or paprika for garnish Use for color and presentation.

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  • In a small bowl, mix together mayonnaise, parmesan cheese, garlic powder, salt, and pepper until smooth.
  • Pat the chicken breasts dry with paper towels, then place them flat in the prepared baking dish.
  • Spoon the mayo mixture evenly over the top of each chicken breast, ensuring they are well coated.

Cooking

  • Place the dish in the oven and bake uncovered for 35-40 minutes, or until the chicken is fully cooked with an internal temperature of 165°F (74°C).
  • Optionally, broil for the last 2-3 minutes to achieve a golden top.

Serving

  • Let the chicken rest for 5 minutes before serving. Garnish with fresh herbs or paprika if desired.

Notes

Remove excess moisture from the chicken before cooking for better topping adherence and crust. For meal prep, assemble in advance and refrigerate for up to 24 hours before baking. Can be frozen for up to 2 months.
