Instructions
 

Preparation

  • In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, beat eggs, sugar, and oil until smooth and slightly frothy.
  • Stir in grated carrots and drained pineapple.
  • Gradually add dry ingredients to wet ingredients. Mix gently until just combined.

Baking

  • Divide batter evenly into prepared pans.
  • Bake for 25–30 minutes or until a toothpick comes out clean.
  • Let cool in pans for 10 minutes, then transfer to wire racks.

Frosting

  • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla until creamy.

Assemble
