  • 3 cups all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon instant yeast
  • 1.5 cups warm water
  • Extra flour for dusting

Preparation

  • In a large mixing bowl, whisk together the flour, salt, and instant yeast until well blended.
  • Pour in the warm water and stir with a wooden spoon until a shaggy dough forms. You don’t need to knead!
  • Cover the bowl with plastic wrap or a kitchen towel and let it sit at room temperature for 12 to 18 hours, ideally overnight. It should double in size and be bubbly.
  • Lightly flour your work surface and turn the dough out onto it. With floured hands, fold the dough over a couple of times. Shape it into a ball and let it rest for about 30 minutes.
  • About 30 minutes before baking, place a Dutch oven (with its lid) in the oven and preheat to 450°F (232°C).
  • Once preheated, carefully remove the hot Dutch oven. Lift the dough using a spatula or your hands and place it inside (you can use parchment paper for easier removal).
  • Cover with the lid and bake for 30 minutes. Then, remove the lid and bake for another 15-20 minutes, until the bread is golden brown.
  • Carefully take the bread out, and let it cool on a wire rack before slicing. Enjoy warm with butter or your favorite spread!

Notes

Pro tips: Try using whole wheat or spelt flour for a different flavor. Mix in dried herbs, garlic powder, or cheese for an extra kick. Adjust baking time for a darker crust or softer bread. Tap the bottom to check for doneness; it should sound hollow. Sprinkle sesame or poppy seeds on top before baking for crunch.
