  • 2 pieces boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 8 ounces egg noodles
  • 2 tablespoons butter
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Preparation

  • Sprinkle salt and pepper evenly over both sides of the chicken breasts.
  • In a large skillet, heat the olive oil over medium heat until shimmering.
  • Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side, until golden brown. Remove from the pan and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring it to a gentle boil.
  • Add the egg noodles to the skillet, stirring well. Cook for about 5 minutes until the noodles are al dente, absorbing the broth.
  • Place the chicken back into the skillet with the noodles. Cover and simmer for an additional 5 minutes.
  • Stir in the frozen peas and butter, mixing until the butter melts and the peas are heated through.

Notes

You can prepare the chicken and noodles ahead of time and store them in the fridge. Just reheat gently on the stovetop before serving. For a twist, swap chicken with shrimp or tofu, or add extra veggies like bell peppers or spinach.
