  • 4-6 large eggs Depending on how hungry you are.
  • 1 cup cheese (mozzarella or favorite blend) Use any type of cheese you prefer.
  • 1 tablespoon olive oil or butter For cooking the eggs.
  • to taste salt and pepper For seasoning.

Pizza Toppings

  • 1/2 cup pepperoni Or any meat substitute.
  • 1/2 cup bell peppers Chopped, optional.
  • 1/4 cup onions Chopped, optional.

Preparation

  • Gather your ingredients: Make sure you have all your ingredients prepped and ready to go.
  • Heat the pan: In a non-stick skillet, heat a tablespoon of olive oil or butter over medium heat.
  • Whisk the eggs: In a bowl, whisk 4-6 eggs (depending on how hungry you are!), season with salt and pepper, and mix well.

Cooking

  • Pour the whisked eggs into the heated skillet and stir gently with a spatula. Cook until they are just beginning to set.
  • Once the eggs are slightly set but still a little runny, sprinkle your cheese and pizza toppings on one half of the eggs.
  • Cover with a lid for a minute to allow the cheese to melt.
  • Gently fold the egg in half over the toppings. Cook for another minute until fully set.
  • Slide onto a plate and enjoy!

Notes

Leftover Pizza Eggs can be stored in an airtight container in the fridge for up to 2 days. Reheat in a microwave or on the stovetop. Experiment with toppings and seasonings to suit your taste!
