  • 8 slices slices of day-old bread (French or challah works best) Stale bread is recommended for better texture.
  • 2 cups fresh blueberries (or frozen) Can substitute with raspberries or strawberries.
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon Can experiment with nutmeg or allspice.
  • 1 pinch salt
  • optional powdered sugar for dusting Add before serving for a festive touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with butter to prevent sticking.
  • Cut the bread into cubes and place half in the baking dish.
  • Scatter the blueberries over the bread cubes.
  • Top with the remaining bread cubes to create layers.
  • In a large mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
  • Pour the egg mixture evenly over the bread and blueberries.
  • Press down gently on the bread to soak up the egg mixture.
  • Cover the dish with aluminum foil and let it sit for about 30 minutes (or refrigerate overnight for best results).

Baking

  • Bake covered in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until golden on top.
  • Remove from oven and let cool slightly before serving. Optionally, dust with powdered sugar.

Notes

This casserole is great for leftovers and reheating. It can be prepared ahead of time for convenience. Pair it with crispy bacon or sausage and fresh fruit salad for a colorful breakfast experience.
