Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon red food coloring
  • Optional: cream cheese glaze or powdered sugar for serving

Instructions

  • Mix Dry Ingredients – In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Combine Wet Ingredients – Beat eggs with buttermilk, melted butter, vanilla extract, and red food coloring until smooth.
  • Mix Wet and Dry – Gradually fold wet ingredients into dry until just combined. Small lumps are fine.
  • Heat Pan – Preheat a non-stick skillet or griddle over medium heat, lightly greased.
  • Cook Pancakes – Pour ¼ cup batter per pancake. Cook until bubbles appear, then flip and cook another 1–2 minutes.
  • Serve Warm – Stack pancakes, drizzle with cream cheese glaze or powdered sugar, and enjoy.

Notes

  • Don’t overmix the batter to keep pancakes fluffy.
  • You can add fresh berries or chocolate chips for variety.
  • Store leftovers in the fridge up to 2 days and reheat gently.
