Preparation

  • Start by preparing your vegetables. Peel and dice the potatoes and chop the onion.
  • In the slow cooker, add the corn kernels, diced potatoes, and chopped onion.
  • Pour in the vegetable or chicken broth, stirring gently to combine everything.
  • Sprinkle in the garlic powder, salt, black pepper, and paprika, mixing thoroughly.
  • If desired, add a tablespoon of butter for extra richness.
  • Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the heavy cream or half-and-half.
  • Once done, taste and adjust seasoning as needed.
  • Ladle the chowder into bowls and garnish with fresh parsley.
