  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 1 tablespoon lemon zest Use fresh lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon juice, lemon zest, and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serving

  • Dust with powdered sugar before serving, if desired.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, refrigerate for up to two weeks or freeze after cooling. Thaw at room temperature when ready to enjoy.
