  • 2 cups cooked spaghetti
  • 2 cups shredded cooked chicken
  • 1 can diced tomatoes with green chilies
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: sliced jalapeños for extra spice

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked spaghetti, shredded chicken, diced tomatoes, cream of chicken soup, garlic powder, paprika, and ½ cup of both cheddar and pepper jack cheese.
  • Season the mixture with salt and pepper to taste, stirring until all ingredients are well blended.
  • Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Top the casserole with the remaining cheese, sprinkling it generously over the top.
  • If desired, layer sliced jalapeños for added heat.
  • Bake in the preheated oven for 25–30 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Swap chicken for turkey or shredded beef for variety. Use gluten-free spaghetti for a gluten-free version. Add vegetables like bell peppers or corn for extra nutrition. Mix in your favorite hot sauce for a spicier kick. Prepare the casserole ahead of time and store it in the fridge until baking. Serve with a sprinkle of fresh cilantro or parsley for a pop of color.
