Preparation

  • Preheat the Oven: Begin by heating your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the Butter and Sugar: In a large mixing bowl, beat together softened butter and sugar until the mixture is light and fluffy.
  • Add in the Eggs and Vanilla: Crack in the eggs, and mix in the vanilla extract until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients, mixing until just combined.
  • Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Create Dents for the Jam: With your thumb or the back of a teaspoon, gently make an indent in the center of each cookie.
  • Fill with Strawberry Jam: Spoon a small amount of strawberry jam into each indent carefully.
  • Bake: Place the cookie sheet in the oven and bake for 10-12 minutes or until the edges are golden.
  • Cool: Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store your Strawberry Kiss Cookies in an airtight container at room temperature for up to a week. You can also freeze them for later enjoyment; just place them in a freezer bag and they will hold up well for up to three months. You can substitute strawberry jam with any other fruit jam or nut butter if desired.
