For the casserole

  • 4 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and chop the sweet potatoes into chunks.
  • Boil the sweet potatoes in a large pot of water until tender, about 15-20 minutes.
  • Drain the sweet potatoes and return them to the pot.
  • Add the brown sugar, butter, milk, vanilla extract, cinnamon, nutmeg, and salt to the pot.
  • Mash the mixture until smooth and creamy.
  • Transfer the sweet potato mixture into a greased baking dish.
  • Top the casserole with mini marshmallows evenly.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the marshmallows are golden brown.
  • Remove from oven, let cool slightly, and serve warm.

Notes

For a twist, add chopped pecans or walnuts for crunch. Substitute half the milk for orange juice for a citrusy flavor. Use canned sweet potatoes for a quicker option. Top with crushed graham crackers before adding marshmallows for added texture. Spice it up by adding a pinch of cayenne pepper for heat. Make it vegan by substituting the butter and milk with plant-based alternatives.
