Ingredients
  

For the Marinade

  • 2-3 Chili peppers (guajillo, ancho) Dried chiles for flavor.
  • 1 stick Cinnamon stick Adds warmth to the marinade.
  • 1/2 cup Achiote paste Color and flavor base.
  • 1 cup Pineapple juice Use canned for best results.
  • 1 tsp Cumin powder Spice for depth.
  • 1 tsp Dried oregano Herb for flavor balance.
  • 3 whole Black peppercorns Enhances flavor.

For the Tacos

  • 1 lb Pork shoulder Cut into chunks.
  • 1 cup Cubed pineapple Fresh is best.
  • 1 medium Onion (sliced) For garnishing.
  • 6-8 pieces Corn tortillas To hold the fillings.

Instructions
 

Marination

  • Combine dried chilis, cinnamon, achiote paste, pineapple juice, cumin, oregano, and peppercorns in a blender to make the marinade.
  • Marinate the pork shoulder in the mixture for at least 2 hours, preferably overnight for deeper flavor.

Cooking

  • Prepare your Weber kettle for medium-high heat around 375°F.
  • Set up the pork on a stainless steel skewer for vertical roasting.
  • Cook the pork, basting every 15 minutes, until the internal temperature reaches 145°F, about 30-40 minutes.

Assembling Tacos

  • Warm the corn tortillas on the Weber kettle for about 30 seconds per side until charred.
  • Slice the cooked pork and assemble it in tortillas, top with pineapple, onions, and cilantro.

Notes

Serve with lime wedges and traditional Mexican beverages like horchata or aguas frescas for a complete meal.
