- 1 pound ground beef
- 1 medium onion chopped
- 1 15 ounce can black beans, rinsed and drained
- 1 15 ounce can kidney beans, rinsed and drained
- 1 15 ounce can corn, drained
- 1 10 ounce can diced tomatoes and green chilies (such as Rotel), undrained
- 1 15 ounce can tomato sauce
- 1 packet taco seasoning
- 4 cups beef broth
- Fritos for topping
- Shredded cheese for topping
- Sour cream for topping
- Green onions chopped, for topping
Brown ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
Add chopped onion to the pot and cook until softened, about 5 minutes.
Stir in black beans, kidney beans, corn, diced tomatoes and green chilies, tomato sauce, taco seasoning, and beef broth.
Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until flavors have melded.
Ladle soup into bowls and top with Fritos, shredded cheese, sour cream, and green onions, as desired.
Serve immediately.
