  • 1.5 lbs boneless skinless chicken breasts or thighs, cut into chunks
  • 2 tbsp butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions
 

  • In a cast iron skillet over medium heat, melt butter and sauté onions until soft.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Add chicken chunks and cook until lightly browned and mostly cooked through.
  • Stir in tomato paste, cumin, chili powder, salt, and pepper. Mix well.
  • Pour in heavy cream and reduce heat to low. Let simmer for 10–15 minutes until sauce thickens and chicken is fully cooked.
  • Garnish with fresh cilantro or parsley and serve hot with rice or flatbread.

Notes

This recipe is perfect for batch cooking or meal prep. You can substitute cream with coconut milk for a dairy-free option.
