  • 6 cups Chex cereal (rice or corn)
  • 1 cup mixed nuts (optional) Add nuts like almonds or pecans for extra crunch.
  • 1 cup semi-sweet chocolate chips Can substitute with different kinds of chocolate.
  • 1 cup toffee bits
  • 1 cup brown sugar
  • ½ cup unsalted butter
  • ¼ cup corn syrup
  • 1 tsp vanilla extract
  • 1 pinch salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare a large baking sheet by lining it with parchment paper.
  • In a large mixing bowl, combine the Chex cereal and mixed nuts if you’re using them. Set aside.

Cooking

  • In a saucepan, melt the butter, brown sugar, corn syrup, and salt over medium heat. Stir constantly until it reaches a gentle boil.
  • Remove from heat and stir in vanilla extract and toffee bits. Mix until combined.
  • Pour the toffee mixture over the Chex cereal and nuts. Carefully fold until the cereal is evenly coated.
  • Spread the mixture onto the prepared baking sheet in an even layer.
  • Bake in the preheated oven for 10-12 minutes, stirring halfway through, until golden brown and fragrant.
  • Remove from the oven and let it cool for a few minutes, then sprinkle the chocolate chips over the warm Chex Mix.
  • Cool completely before breaking into pieces and serving.
