Ingredients
  

  • 1.5-2 lbs Tri-Tip Roast
  • 2 tbsp Olive Oil for searing or rubbing
  • 1 tbsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1/2 tsp Dried Oregano or other preferred dry rub ingredients
  • 4 Bread Rolls Ciabatta, French Roll, Sourdough, etc.
  • 4 slices Cheese Pepper Jack, Smoked Gouda, Cheddar, Provolone, etc.
  • 1/2 cup BBQ Sauce or your preferred sauce
  • Lettuce sliced tomato, onion, caramelized onions, avocado slices, pickled jalapenos (to taste, for toppings)

Instructions
 

  • Prepare the Tri-Tip: Trim excess fat from the tri-tip roast. Pat dry with paper towels.

  • Season the Tri-Tip: In a small bowl, combine salt, pepper, garlic powder, paprika, and oregano. Rub the seasoning mixture evenly over the entire surface of the tri-tip.

  • Choose your Cooking Method (Grilling): Preheat grill to medium-high heat. Grill tri-tip over direct heat for 2-3 minutes per side to sear. Move to indirect heat and continue cooking until the desired internal temperature is reached (see temperature guide below).

  • Choose your Cooking Method (Oven Roasting): Preheat oven to 300°F (150°C). Sear the tri-tip in a hot skillet with olive oil for 2-3 minutes per side. Transfer to a roasting pan. Roast until desired internal temperature is reached.

  • Choose your Cooking Method (Smoking): Preheat smoker to 225°F (107°C). Smoke the tri-tip for 2-3 hours, or until the desired internal temperature is reached.

  • Rare: 120-130°F
  • Medium-Rare: 130-140°F (Recommended)
  • Medium: 140-150°F
  • Medium-Well: 150-160°F
  • Well-Done: 160-165°F
  • Rest the Tri-Tip: Remove the tri-tip from the grill, oven, or smoker and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, resulting in a more tender cut.
  • Slice the Tri-Tip: Using a sharp knife, slice the tri-tip thinly against the grain.

  • Assemble the Sandwiches: Lightly toast the bread rolls. Spread BBQ sauce (or your preferred sauce) on the top and bottom buns. Add sliced tri-tip to the bottom bun, followed by cheese and your desired toppings (lettuce, tomato, onion, etc.). Top with the other half of the bun.
