  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 small flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine cooked chicken, black beans, cumin, and garlic powder.
  • Warm the tortillas slightly in a microwave for 30 seconds to make them pliable.
  • In each tortilla, spoon the chicken mixture and sprinkle some cheese. Roll tightly and place seam-side down in a baking dish.
  • Once all enchiladas are in the dish, pour enchilada sauce evenly over the top.
  • Sprinkle remaining cheese over the sauce.
  • Bake for 20-25 minutes until cheese is melted and bubbly.
  • Garnish with fresh cilantro before serving.

Notes

You can swap chicken for leftover turkey or beef and add vegetables for extra flavor. Corn tortillas can be used for a gluten-free option.
