  • 3 grams sodium alginate
  • 1 liter water for calcium bath
  • 30 grams calcium lactate
  • Optional: sugar or simple syrup to taste

Instructions

  • Blend watermelon juice with sodium alginate until smooth. Let rest 30 minutes to remove bubbles.
  • Dissolve calcium lactate in 1 liter of cold water to make the calcium bath.
  • Using a syringe or dropper, drop small amounts of the watermelon mixture into the calcium bath to form popping boba.
  • Let the boba set for 1-2 minutes. Avoid over-soaking.
  • Remove pearls with a slotted spoon and rinse in cold water.
  • Serve immediately or store in syrup for up to 3 days.

Notes

  • Use ripe watermelon for best flavor.
  • Adjust sweetness by adding sugar if needed.
  • Use calcium lactate for a cleaner taste instead of calcium chloride.
