- 200 ml fresh watermelon juice strained
- 3 grams sodium alginate
- 1 liter water for calcium bath
- 30 grams calcium lactate
- Optional: sugar or simple syrup to taste
Blend watermelon juice with sodium alginate until smooth. Let rest 30 minutes to remove bubbles.
Dissolve calcium lactate in 1 liter of cold water to make the calcium bath.
Using a syringe or dropper, drop small amounts of the watermelon mixture into the calcium bath to form popping boba.
Let the boba set for 1-2 minutes. Avoid over-soaking.
Remove pearls with a slotted spoon and rinse in cold water.
Serve immediately or store in syrup for up to 3 days.
