- Squeeze excess water
- 1 cup All-purpose flour
- 0.5 cup Sugar
- 0.25 cup Butter Melted
- 1 tsp Baking powder
- 0.5 tsp Ground cinnamon
- 0.25 tsp Salt
- 1 Egg
- 0.5 cup Chocolate chips Optional
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
In another bowl, mix the grated zucchini, melted butter, sugar, egg, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients and stir until just combined.
Fold in the chocolate chips if using.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes or until the edges are golden brown.
Remove from oven and let cool on a wire rack before serving.
