- 2 large sweet potatoes scrubbed and halved
- 1 tbsp olive oil
- Salt and black pepper to taste
- ½ cup black beans drained and rinsed
- ½ cup shredded cheddar or mozzarella cheese
- 2 tbsp Greek yogurt or sour cream
- 1 green onion chopped
- 1 tbsp crumbled bacon or chopped spinach optional
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the sweet potatoes into thin fries.
- Toss with olive oil, salt, and pepper until evenly coated.
